Howdy y’all! Sorry it’s been a while (yes again). I feel like I’m always having to say sorry for something ahhhh! Hehe well anyways, today I am giving you my recipe for potato soup – I am pretty sure my church loved it since when I made it for a soup supper back in March it went pretty fast so I just thought I should share it with you guys! This soup is packed with cheese, potatoes, broccoli, bacon, onions and is the perfect fall/winter dish. Hope you enjoy 🙂
Gemma’s Cheesy Potato Soup!
BE AWARE: It’s cheesy 😉
Ingredients-
-1/2Â cup butter (1 stick)
-1/2 cup olive oil
-1 large onion, chopped
-Salt and pepper to taste
-1 quart chicken broth/stock
-2 crumbled pieces of cooked bacon
-1 tablespoon cornstarch or all-purpose flour
-8 red potatoes, chopped (peeled if desired)
-2 cups of broccoli, chopped
-2 cups whole milk
-1 1/2 cups of sharp cheddar cheese (white)
Optional: replace 1 cup of the milk for half-and-half for a creamier texture.
Directions-
- Cook bacon (use if desired). Chop all ingredients that need chopping.
- Combine the stick of butter and olive oil in a large pot over medium heat. Throw in onions and cook until onions are nicely sweated. Add salt and pepper. Stir frequently.
- Add broth and whisk in cornstarch/flour right away so no clumps form. Add the potatoes and bring to boil. After potatoes are tender, add in the chopped broccoli, bacon,  milk/cream, cheese,  and stir until all combined. Cook for about 10 more minutes and then it’s ready to serve! Season with salt and pepper until it reaches your desired taste.
Top with more cheese if you like (never can have enough cheese;)!
